Dark tea 黑茶 [hēi chá] has many varieties and a long history back to around the 11th century, at that time of Northern Song Dynasty (1074) there was already the recordation of producing dark color tea from green tea. Dark tea belongs to post fermented tea, its fermentation degree will change with time.
